Tasmania’s floral emblem, Eucalyptus globulus, commonly known as southern blue gum, is a species of tall, evergreen tree endemic to southeastern Australia. It has mostly smooth blue bark, juvenile leaves that are whitish and waxy on the lower surface, glossy green, sickle-shaped adult leaves, flower buds arranged singly or in groups of three or seven that usually flower every second year. The white flowers produce a beautiful nectar for the bees to convert into a wonderful honey medium in colour. Very popular with kids and we commonly hear “thats how I remember honey tasted like”. Great drizzled on yoghurt or icecream, for cooking and everyday use.
