Also known as Christmas Bush is a native shrub which produces delicate white flowers in December. It is a honey high in glucose, hence it candies very quickly and has a flavour a little like butterscotch, sweet with a distinctive aroma. A hidden gem among honey varieties. Usually sold as a soft set due to the fast crystallization.
