This honey is produced when the Manuka continues flowering later than usual (late December and January) and so overlaps the Leatherwood flowering period (late December to end of February). The bees collect the nectar from both the Manuka and Leatherwood flowers resulting in a mix of varing proportions. This produces a nice flavoured honey with a varying Methylglyoxal-[MGO] content. The honey is tested at University of the Sunshine coast for activity levels.
